Physical and Chemical Properties | This product is pepsin extracted from the gastric mucosa of pigs, sheep or cattle. It is a white or light yellow powder. Soluble in water, the aqueous solution is acidic. Isoelectric point pH = 1. Insoluble in ethanol, chloroform, ether. Non-toxic, with a special smell of meat; It is hygroscopic. Dry enzyme is relatively stable, heating to 1000C for 10min without inactivation. The aqueous solution starts to inactivate when heated to above 700C or above pH 6.2, and is irreversibly inactivated when pH>8. It is stable in strong acidic solution, and the optimum pH is 1.5~2.
